Pecan & Rolled Oats Pancakes

This pancake recipe is easy to make and requires few ingredients. You can use it as the base and change it to your personal taste. Use chopped walnuts or cashews instead of pecans, or coconut oil instead of canola oil. Vary the flavor by using pumpkin pie spice instead of the cinnamon. 

Many toppings go well with these pancakes, including syrups, jellies, or jams. I enjoyed them recently with my homemade blueberry preserves on top. 

Pecan & Rolled Oats Pancakes Recipe

Ingredients
1 cup (240 mL) quick-cooking oats
1 1/2 tsp (7.5 mL) baking powder
2 eggs
1/3 cup (78 mL) milk (I use skim)
1/3 cup (78 mL) mashed banana (about 1/2 medium banana)
1 tsp (5 mL) cinnamon
2 tbsp (30 mL) finely chopped pecans
2 tbsp (30 mL) canola oil 

Directions

  1. Use a food processor or any type of blender to process the oats into a flour-like consistency. Mix the oats, baking powder, and cinnamon in a small bowl and set aside.
  2. In a separate bowl, mix the eggs, milk, and mashed banana. Add the dry ingredients and mix until just combined. 
  3. Fold in the pecans, then let the batter sit for 10 minutes so that the baking soda can do its work. 
  4. Heat oil in a nonstick skillet over medium heat. To make each pancake, drop 1/4 cup (60 mL) of batter onto the hot skillet. Check periodically to see if the skillet side is lightly brown. When lightly brown, flip the pancake to cook until lightly brown on the other side.
