Norma Mahabir’s Spice Cake

Norma Mahabir, who emigrated from the Caribbean to Canada, often brought her moist, flavorful spice cake to our church for tea and talk after the service. I loved it so much that I asked for the recipe, and I have made it many times since. It freezes well, but is best fresh. No frosting needed! Divine when eaten warm with a scoop of vanilla ice cream.

Spice Cake Recipe

(makes 2 loaf-pan-sized cakes)

Ingredients

• 1 cup margarine, melted
• 1 cup sugar
• 1 cup molasses
• 1 tsp. each: cinnamon, cloves, ginger
• 3 eggs
• 2 tsp. baking soda
• 2 Tbsp. hot water
• 2 cups sifted flour
• 1 cup boiling water

Instructions

1. Preheat oven to 350°F and prepare your loaf pans (either grease and flour them, or line with parchment paper).
2. Combine melted margarine, sugar, molasses, spices, and eggs. Beat well.
3. Dissolve baking soda in the hot water, and stir it into the batter.
4. Add the flour to the batter, beat well. Add the boiling water to the batter, blend it in.
5. Pour the batter into the loaf pans and bake for 45 minutes, or until a toothpick comes out clean. Let cool for a few minutes (or fully) before removing from pans. Slice and enjoy!
